As you probably already know iTunes does not allow you to restore your device without updating to the newest version of IOS. If for whatever reason you do not want to update your iDevice and would just like to restore it then follow this simple tutorial.
Step 1. Backup your device in iTunes.
Step 2. Download the firmware from your device here.
Step 3. Once you have downloaded the firmware, open iTunes.
Step 4. In iTunes go to your device and press Shift and click restore at the same time.
Step 5. Follow the instructions and restore your device.
